Biryani in Hyderabad is a cornerstone of Indian cooking. It is one of the most well-known meals of North India and seems to have 49 different variations.
It is manufactured, containing marinated meat (typically chicken; it is marinated in spices overnight) and yoghurt before cooling. It would frequently be cooked on dum (over coals) and necessitated careful monitoring to avoid caramelizing onions on the meat.
